Season cast iron with thin oil layers and avoid soap initially. Stainless steel is dishwasher safe. Carbon steel seasons like cast iron. Enameled cast iron shouldn't be used on high heat empty. All uncoated options improve with use.
"Ceramic" nonstick is still a coating that degrades — it's not the same as a ceramic pot. "PFOA-free" nonstick may still contain other PFAS compounds. "Green" or "eco" pans are often just marketing on the same coated aluminum.
